Hungry? Here’s Five healthy summer lunch recipes

Maybe its the recent sunshine we’ve been having. Or the fact that I really am utterly bored with another listless ham sandwich, hurriedly scoffed whilst working.

Whatever the reason, this past week I’ve vowed to up my game a little when it comes to my midday meal. And to try and plan ahead a little more too.

Its always my lack of Lunch For One planning that leads to bad choices made in haste.

That and the dip (not hummus) in energy that arrives just as I realise it’s 2.00pm and I’ve been so engrossed in work that I’ve been studiously ignoring the loud tummy rumblings.

Both of those are a factor in my standing at the fridge, in front of a packet of sliced ham. Asking it to love me.

So, as I’ve been scouring the interweb for recipes that are either quick to throw together or can be made ahead and eaten at a (sensible) lunch time, I thought I’d share a few here.

These sound healthy, delicious and not too labour intensive…

Again with the pasta. I tried but its not something I could give up. So instead I choose the moderation approach.

Just a few ways to make lunch time more exciting without the need to ask George Clooney to pop along and make you a Nespresso. Although I’m sure that would work too.

I have a few favourite food blogs bookmarked but honestly, if I’m ever stuck for ideas, I just head on over to Pinterest.

By the way, were you impressed with my seamless *coughs* homage to the Notting Hill bookshop scene? I bet Julia Roberts doesn’t have that problem with ham…
