Lazy weekend… two of the best words in the vocabulary if you ask me! Well… maybe with the exception of long weekend.
I was going to save this post for the long Easter weekend but then I figured, if you’re anything like me, all meals, including those of the lazy breakfast variety need to be planned and shopped ahead for.
Whilst these recipes may require a little more time than it takes to pore milk on your cornflakes, the pay off when you sit down to eat, in no real rush at all is more than worth it.
So here’s five lazy weekend breakfast ideas to peruse and then plan in for the four day Easter break. The only stipulation is that you cook at leisure, eat the end result whilst still in PJs and accompany with plenty of coffee and papers…

With asparagus season just over the horizon, this would make the perfect Easter breakfast or brunch. My mouth was watering as I read through this recipe. Note to self – don’t construct this type of post until you’ve had lunch!
